Spicy Peanut Noodles
I worked at the coolest restaurant in the City after I graduated high school. When asked what I wanted for lunch during my first shift, the spicy peanut noodles were recommended. I still remember the shock, confusion I felt as I ate them. So different from anything I had eaten before. Cold noodles, hot hot chicken, strange, and mysterious flavors. I wound up making many more gallons of this sauce, but never got tired of it. As I said, I think it tastes best with a hot piece of grilled Chicken breast on top, but would also make and interesting salad to bring to your next potluck.
Spicy Peanut Noodles
Serves 4
1/4 cup smooth peanut butter
3 Tbsp. water
3 Tbsp. soy sauce
1/4 cup tahini
2 Tbsp. vegetable oil
2 Tbsp. sesame oil
1/3 cup rice wine vinegar
3 Tbsp. honey
2 tsp. garlic, chopped
1/2 tsp. red pepper flakes
3/4 lb. noodles ( I like angel hair)
1/4 cup chopped green onion
1/4 cup chopped roasted peanuts (optional)
Place peanut butter in a bowl and add ingredients in the order given except onion and peanuts, season with salt if desired. Cook noodles according to directions and cool. Toss noodles with dressing and green onions. Top with peanuts.
